Ingredients: 

  • 1 1/2 cups microwavable rice, cooked according to package instructions, or leftover cooked medium-grain or short-grain white rice, or brown rice 
  • 2/3 cup milk, (dairy or non-dairy) 
  • 1/4 cup raisins 
  • 1/2 teaspoon ground cinnamon 
  • 1 1/2 tablespoons honey or maple syrup 

Method: 

1. Combine rice, milk, raisins and cinnamon in a large microwave-safe bowl.

2. Microwave, stirring halfway through, until warmed and slightly thickened, about 5-6 minutes total. 

3. Drizzle with honey and let sit for at least 5 minutes, for flavors to meld, before serving.

Tip: Add a splash of vanilla extract or a sprinkle of nutmeg.
