Ingredients: 

  • 1 egg, beaten
  • 1 cup cooked leftover rice
  • 1/4 cup frozen peas and carrots, or other mixed vegetables
  • 1/4 cup shredded rotisserie chicken, canned chicken, or chopped lunch meat
  • 2 teaspoons soy sauce

Method: 

  1. Microwave beaten egg in a large microwave-safe bowl for 30 seconds. Stir, then microwave for another 15-30 seconds, or until fully scrambled. Remove from the bowl and set aside.
  2. Add the rice, peas and carrots, chicken and soy sauce to the bowl; stir to combine.
  3. Microwave on high for 1-2 minutes. Return eggs to bowl, stir, and continue microwaving another 30-60 seconds until everything is heated through.
  4. Serve warm.

Tip:

Garnish with sesame seeds, green onions, or a drizzle of sesame oil.
