Ingredients:
- 2 (5-ounce) cans tuna, drained
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika, optional
- Ridged potato chips, for serving
- Chopped fresh parsley (optional) for garnish
Method:
- Combine tuna with mayonnaise, salt, pepper and paprika in a medium bowl. Mash together with a fork.
- Spoon a small mound of tuna mixture onto a chip, then top with a second chip to form a mini sandwich, or leave open-faced and sprinkle with parsley.
- Serve immediately to keep the chips crisp.
