Ingredients: 

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice, grapefruit juice or lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked couscous, cooled
  • 2 cups baby spinach or arugula
  • 1 grapefruit, peeled and segmented, or other citrus like oranges, mandarins or clementines
  • 1 avocado, peeled, pitted and sliced
  • 1/4 cup crumbled feta cheese or other crumbly cheese like parmesan, cotija or goat cheese (optional)

Method: 

  1. Whisk olive oil, lime juice, honey, salt and pepper together in a small bowl until combined.
  2. Combine couscous, spinach, grapefruit and avocado slices in a large serving bowl. Drizzle with dressing and gently toss to coat.
  3. Sprinkle with feta cheese, if using, and serve.

Tips:

  • Substitute the lime dressing mixture for your favorite vinaigrette dressing
  • Substitute quinoa, lentils, rice or other grain in place of the couscous.
