Ingredients: 

  • 2 cups tortilla chips
  • 1/2 cup canned chicken, drained
  • 1/2 cup black beans, drained and rinsed, or 2 cups cooked black beans, drained
  • 1/2 cup canned corn, drained, or 1/2 cup frozen corn kernels, thawed and drained
  • 1/2 cup shredded cheese (like cheddar or a Mexican-style blend)
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley (optional, for garnish)
  • 1 lime, juiced, or 1 tablespoon lime juice (optional, for garnish)

Method: 

  1. Arrange half of the tortilla chips in a single layer on a microwave-safe plate.
  2. Top with half of the chicken, beans, corn and cheese. Repeat layers with remaining ingredients.
  3. Microwave on high for 1 minute or until the cheese is melted and slightly bubbling.
  4. Garnish with parsley and a squeeze of lime, if using, and serve.

Tip:

Add additional toppings like sour cream, diced avocado or salsa.
