Ingredients:
- 2 packages instant ramen noodles, seasoning packet removed, cooked and drained according to package directions
- 1/2 cup peanut butter, creamy or chunky
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup (optional)
- 2 tablespoons rice vinegar or lime juice
- 1/2 cup warm water
- 1 can (11-oz) Mandarin orange segments, drained
Method:
- Whisk together peanut butter, soy sauce, honey or maple syrup, if using, rice vinegar or lime juice, and warm water in a large bowl until smooth and pourable.
- Toss the cooked noodles with the peanut sauce until evenly coated.
- Gently fold in Mandarin orange segments. Refrigerate until chilled, at least 15 minutes. Divide among serving bowls and enjoy!
Tip:
Serve with additional toppings, like chopped green onions, crushed peanuts or sesame seeds.
