Ingredients:
- 1 tablespoon vegetable oil or sesame oil
- 1 (14-oz.) block firm tofu, pressed, drained, and cut into 1-inch cubes
- 3 tablespoons peanut butter
- 3 tablespoons orange juice
- 1-2 teaspoons low-sodium or gluten-free soy sauce
- 1 teaspoon honey, maple syrup or granulated sugar, optional
- 8-12 large lettuce leaves, romaine, iceberg, or butter varieties
Method:
- Heat oil in a large pan over medium heat. Add tofu and cook, turning occasionally, until golden and lightly crispy on all sides, about 8-10 minutes.
- Meanwhile, whisk together peanut butter, orange juice, soy sauce, and honey (if using) until completely smooth.
- Pour sauce over tofu and toss to coat. Simmer until thickened slightly, about 1-2 minutes.
- Remove from heat and divide tofu mixture evenly among lettuce leaves. Serve immediately.
Tip:
Add shredded carrots or chopped peanuts to the tofu mixture for extra crunch, and garnish
