Ingredients: 

  • 1-2 tablespoons butter or oil
  • 2 slices white bread
  • 1/2 cup shredded white cheddar, or Swiss, ricotta, or mozzarella cheese
  • 1/4 cup fresh or frozen and thawed blueberries, gently crushed
  • Honey, for drizzling (optional)

Method: 

  1. Heat butter or oil in a skillet over medium heat.
  2. Add one slice of bread. Top with cheddar and blueberries and remaining slice of bread. 3. Cook, flipping halfway through, until cheese is melted and toast is golden-brown, about 2-3 minutes per side. Remove from skillet, slice, and drizzle with honey, if desired. Serve warm.
