Ingredients: 

  • 1 (20-ounce) can chunk chicken breasts, drained
  • 3/4 cup grated Parmesan cheese, divided
  • 1 large egg
  • 1 teaspoon pepper
  • 1 head romaine lettuce, roughly chopped
  • 2 tablespoons Caesar dressing

Method:

  1. Preheat oven to 375°F and line a rimmed baking sheet with parchment paper. In a large bowl, mix chicken, 1/2 cup Parmesan, egg and pepper until thoroughly combined, and chicken is finely shredded.
  2. Press chicken mixture into 1/4-inch-thick circle on prepared baking sheet. Bake until golden-brown and firm, about 35-40 minutes.
  3. Top chicken crust evenly with lettuce, and drizzle with Caesar dressing. Sprinkle with remaining Parmesan. Slice and serve.

Tip:

To make Caesar dressing, simply mix 2 tablespoons mayonnaise, 1 tablespoon grated Parmesan cheese, 1/2 teaspoon lemon juice and 1/8 teaspoon pepper together in a small bowl until combined.
