Ingredients: 

  • 1 tablespoon olive oil, or vegetable oil
  • 1 pound turnips, peeled and cut into 1-inch pieces
  • 1/4 cup orange juice, fresh or bottled
  • 1 tablespoon honey, or maple syrup, optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley, optional, for garnish

Method:

  1.  Heat oil in a large skillet over medium heat. Add turnips and saute, stirring occasionally, until softened and golden-brown, about 8-10 minutes.
  2. Add orange juice, honey (if using) and salt. Cook, stirring occasionally, until juice reduces and glazes turnips, about 5-8 minutes.
  3. Transfer glazed turnips to a serving platter and garnish with black pepper and parsley.

Tip:

Substitute rutabaga, parsnips, or carrots for turnips.
