Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon lime juice, grapefruit juice or lemon juice
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked couscous, cooled
- 2 cups baby spinach or arugula
- 1 grapefruit, peeled and segmented, or other citrus like oranges, mandarins or clementines
- 1 avocado, peeled, pitted and sliced
- 1/4 cup crumbled feta cheese or other crumbly cheese like parmesan, cotija or goat cheese (optional)
Method:
- Whisk olive oil, lime juice, honey, salt and pepper together in a small bowl until combined.
- Combine couscous, spinach, grapefruit and avocado slices in a large serving bowl. Drizzle with dressing and gently toss to coat.
- Sprinkle with feta cheese, if using, and serve.
Tips:
- Substitute the lime dressing mixture for your favorite vinaigrette dressing
- Substitute quinoa, lentils, rice or other grain in place of the couscous.
