Ingredients:
- 1 large egg
- 1 cup microwavable rice, cooked according to package instructions, or leftover cooked medium-grain or short-grain white rice, or brown rice
- 1/2 cup canned chopped pineapple, drained
- 1/2 cup frozen mixed vegetables, thawed
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder, optional
Method:
1. Beat egg in a large microwave-safe bowl. Microwave in 30-second intervals, stirring until scrambled and fully cooked, about 1 minute.
2. Add rice, pineapple, vegetables, soy sauce and garlic powder, and toss gently to combine.
3. Microwave for an additional 30 seconds, or until dish is heated evenly. Serve warm.
Tip: Add a pinch of red pepper flakes or sriracha for a spicy version.
