Ingredients: 

  • 2 (15-ounce) cans corn kernels, drained 
  • 1 (8-ounce) block cream cheese, softened 
  • 2 cups shredded cheese, like cheddar, pepper Jack or mozzarella 
  • 1 teaspoon garlic powder 
  • Sliced pickled or fresh jalapenos, optional, for garnish

Method: 

1. Preheat oven to 375°F. Combine corn, cream cheese, cheddar cheese and garlic powder in an oven-safe baking dish or skillet. 

2. Bake until bubbly and golden-brown on top, about 15-20 minutes. 

3. Garnish with jalapenos and serve warm with tortilla chips.

Tip: Add additional spices like a pinch of chili powder or smoked paprika to corn mixture.
