Ingredients: 

  • 1 tablespoon vegetable oil or sesame oil
  • 1 (14-oz.) block firm tofu, pressed, drained, and cut into 1-inch cubes
  • 3 tablespoons peanut butter
  • 3 tablespoons orange juice
  • 1-2 teaspoons low-sodium or gluten-free soy sauce
  • 1 teaspoon honey, maple syrup or granulated sugar, optional
  • 8-12 large lettuce leaves, romaine, iceberg, or butter varieties

Method:

  1. Heat oil in a large pan over medium heat. Add tofu and cook, turning occasionally, until golden and lightly crispy on all sides, about 8-10 minutes.
  2. Meanwhile, whisk together peanut butter, orange juice, soy sauce, and honey (if using) until completely smooth.
  3. Pour sauce over tofu and toss to coat. Simmer until thickened slightly, about 1-2 minutes.
  4. Remove from heat and divide tofu mixture evenly among lettuce leaves. Serve immediately.

Tip:

Add shredded carrots or chopped peanuts to the tofu mixture for extra crunch, and garnish
