Ingredients: 

  • 2 (5-ounce) cans tuna, drained
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika, optional
  • Ridged potato chips, for serving
  • Chopped fresh parsley (optional) for garnish

Method: 

  1. Combine tuna with mayonnaise, salt, pepper and paprika in a medium bowl. Mash together with a fork.
  2. Spoon a small mound of tuna mixture onto a chip, then top with a second chip to form a mini sandwich, or leave open-faced and sprinkle with parsley.
  3. Serve immediately to keep the chips crisp.
