Ingredients:
- 1 small bunch garlic scapes, or green onions, cut into 2-inch pieces
- 1/2 cup white vinegar, or apple cider vinegar
- 1/2 cup water
- 2 teaspoons salt
- 1/2 teaspoon red pepper flakes, optional
Method:
1. Pack scapes into a clean jar with a resealable lid.
2. Whisk together vinegar, water, salt and red pepper flakes until salt is dissolved completely.
3. Pour mixture over scapes, ensuring they are fully submerged.
4. Seal jar tightly, and let sit at room temperature for at least 1 hour, or overnight.
5. Enjoy as pickles, or as a topping for salads, tacos, or bowls.
Tip: For extra flavor, add a clove of garlic or a pinch of sugar to the vinegar brine mixture.
Tip: Pickled onions should last in the refrigerator for 10-14 days.
