Ingredients: 

  • 2 teaspoons olive oil
  • 1 pound ground pork, ground turkey or ground chicken
  • 3 heads baby bok choy, cut into 1 1/2-inch pieces
  • 1 cup tomato sauce or crushed tomatoes
  • 2 tablespoons low-sodium or gluten-free soy sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground ginger (optional)
  • 2 teaspoons toasted sesame seeds, for garnish (optional)
  • 4 cups cooked long-grain white rice or brown rice, kept warm

Method:

  1. Heat oil in a large skillet over medium-high heat. Add pork, and cook until browned, breaking it up as it cooks, about 5-6 minutes. Add bok choy, and cook until crisp-tender, about 2 minutes.
  2. Stir in tomato sauce, soy sauce, garlic powder, onion powder and ginger, if using, and cook, stirring frequently, until bok choy is tender, sauce reduces and coats the pork, about 1-2 minutes.
  3. Garnish with sesame seeds, if using. Serve with rice, and enjoy.
