Serves 6

Ingredients:

  • 3 apples
  • 1/4 cup rolled oats
  • 2 tablespoons lightly packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 1/2 cups vanilla yogurt

Directions

  1. Preheat the oven to 350 degrees. Spray a baking sheet with nonstick
    spray.
  2. Cut apples in half and remove the core using a small (paring) knife.
    Add apples to baking sheet, skin side down. Set aside.
  3. To make granola: In a bowl, mix oats, brown sugar, cinnamon, salt
    and butter with a fork. Using a spoon, add the mixture to each
    apple. Bake for 30-35 minutes.
  4. Once apples are baked through, allow to cool for 5 minutes.
    Serve with a large scoop of vanilla yogurt and an extra sprinkle of
    cinnamon (optional).
