Ingredients:
- 1 teaspoon olive oil
- 1 pound ground pork, ground turkey or ground chicken
- 1 (15-ounce) can kidney beans, black beans or pinto beans, drained and rinsed, or 2 cups cooked beans, drained
- 2 (15-ounce) cans diced tomatoes
- 1 tablespoon chili powder or ground cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley (optional, for garnish)
Method:
- Heat oil in a large pot over medium heat. Add pork, and cook until browned, breaking it up as it cooks, about 5-6 minutes. Add onions, and cook until tender, about 3-4 minutes.
- Stir in the beans, diced tomatoes, chili powder, salt and pepper, and bring mixture to a simmer.
- Cook, stirring occasionally, until slightly reduced, about 10 minutes.
- Divide among serving bowls and garnish with parsley, if using.
Tip:
For additional toppings, add shredded cheese, sour cream or diced avocado.
