Ingredients:
- 1 tablespoon olive oil
- 1 (8-ounce) package tempeh, cut into small bite-sized pieces
- 3 cloves garlic, minced, or 1/4 teaspoon garlic powder
- 4 cups cooked long-grain white rice or brown rice
- 2 cups frozen mixed vegetables, such as carrots, corn, green beans and peas
- 3 tablespoons low-sodium or gluten-free soy sauce
- 2 green onions, thinly sliced (optional)
Method:
- Heat oil in a large skillet over medium-high heat until it just begins to smoke. Add tempeh, and cook, stirring frequently, until golden-brown, about 2-3 minutes. Stir in garlic, and cook until fragrant, about 15 seconds. Add rice, breaking up clumps of rice with a wooden spoon as it cooks. Cook rice until fully heated through and lightly toasted, about 1-2 minutes.
- Stir in vegetables and soy sauce, and cook until fully heated through, about 2-3 minutes. Top with green onions, if using. Serve and enjoy.
