Ingredients: 

  • 6 chicken thighs, bone-in and skin-on
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons olive oil
  • 3 cloves garlic, minced, or 1/4 teaspoon garlic powder
  • 1/2 cup orange juice
  • 2 tablespoons honey
  • 2 tablespoons low-sodium or gluten-free soy sauce
  • 1 pound plums, seeded and cut into 1-inch slices
  • 4 cups cooked long-grain white rice, or brown rice, kept warm

Method:

  1. Preheat oven to 400°F. Season chicken with salt and pepper. Heat oil in a large, oven-proof skillet over medium-high heat. Cook chicken, skin-side-down, until golden-brown, about 4-5 minutes. Transfer chicken to a plate. Add garlic, and cook until fragrant, about 30 seconds. Stir in orange juice, honey and soy sauce, and bring to a simmer. Return chicken to skillet. Scatter plum slices around chicken.
  2. Transfer skillet to oven and bake, basting chicken every 10 minutes, until fully cooked, or until meat thermometer reads 165°F, about 20 minutes.
  3. Serve with rice, and enjoy.
